Name of cauliflower is form the Latin caulis, an acknowledgement of unusual place among family of the food plant that normally produces only greens for eating. Brasica also includes kale, Brussels sprouts, collard green and broccoli, though all these are different cultivar groups.
It is low in fat and high in the dietary fiber, water, folate and Vitamin C, it is member or brassica family, with broccoli as well as cabbage what are beneficial to the human health, it has anti-cancer compound that is released when it is chewed or chopped, it also contain some other glucosinolates besides the substances, sufurrophane that may improve ability of liver to detoxify the carcinogenic substances, while high intake of the cauliflower can be found to reduce risk of aggressive cancer prostate. It can be boiled, roasted, steamed, fried and eaten raw, thick stalks and outer leaves are removed when cooking cauliflower.
Leaves of cauliflower are edible as well; leaves are discarded often, while florets should also be broken in similar size pieces so that they are evenly cooked. After 8 minutes of steaming, 5 minutes of boiling, florets are soft, but are not mushy. When cooking cauliflower stirring can break florets into uneven and smaller pieces, it is served often with cheese sauce in dish of cauliflower cheese. Dieters of low carb can use this as responsible and suitable substance for the potatoes for they can produce similar texture, they lake starch of potatoes. Some times cauliflower's leaves are also eaten to get some diet, it is considered as cool season crop. |
