Mushrooms are belonging to biological kingdom Fungi, and not plant kingdom, yet they are generally considered to be the vegetables, in retail industry at least. Grains, seeds, nuts, spices, culinary fruits and herbs are not usually considered to be vegetables; even some of them are parts of the plants.
Vegetables are the part of plants that are normally regarded as suitable part of salted dishes or savory, rather than sweet dishes. Many exceptions are there such as carrot pumpkin that can be eaten as vegetable in savory dish, which can be served and sweetened as dessert. Vegetables such as bell peppers, carrots and celery are normally eaten either cooked or raw, while the others are eaten when cooked. Vegetables are normally eaten in variety of ways, such as part of main meal and like snakes. Nutritional content of the vegetables varies considerably, they contain fat, protein and proportion as well. Vegetables contain high vitamin proportion, dietary minerals, provitamins, carbohydrates and fiber.
Many vegetables contain phytochemicals that may have antibacterial, antioxidant, antiviral, anticaricinogenic and antifungal properties. Green leafy vegetables is because to presence of green pigment chlorophyll. It is affected by the pH and the changes to olive green in the acid conditions as well as green in the alkaline conditions. These acids are released in the steam during it cooked, particularly if it is cooked without any cover. Yellow color of the vegetables and fruits are because of presence of the carotenoids that are affected also by the normal cooking processes or the pH change in it. These pigments are water soluble. |
